market inspiration: yellow


On days that I go to the farm market, I often notice upon arriving home that my purchases all fit into a color scheme.  Apparently, I subconsciously shop like a designer and stylist-always thinking about the visual presentation.  This weeks market supplied a week full of yellow.  These wax beans and little yellow tomatoes came home along with a yellow watermelon and a yellow-y orange cauliflower.  They inspired a fresh and pretty new salad for our dinner last night.

Yellow Bean and Feta Salad with Red Pepper Vinaigrette

1/2 lb yellow wax beans
1 c baby yellow tomatoes, halved
1 medium cucumber, peeled, sliced and halved
1/2 c feta cheese

-blanche beans in boiling water for 3-4 minutes, until softened slightly
-rinse under cool water to bring to room temperature
-toss in bowl with tomatoes, cucumber and feta

1/2 red bell pepper
2 green onions
1/4 c olive oil
1 T red wine vinegar
squeeze of fresh lime
salt and pepper to taste

-process all of above in food processor until smooth and well blended
-pour over salad, mix and serve
