Friday is PIE DAY!

We are moving my mother-in-law into her new home today, and I thought that a pie would make the transition a little smoother for everyone.  She has a great fondness for peanut butter, and I wonder if this could be a genetic trait, as my husband is also crazy for peanut butter.  This recipe from the 'Sweety Pies' cookbook caught my eye, and I thought I'd give it a whirl.
Ava Joy's Peanut Butter Cream Pie

One 9- inch single pie crust, rolled and fitted into pie plate
1 cup chunky peanut butter
1 teaspoon vanilla extract
1/4 teaspoon salt
2 tablespoons unsalted butter, melted
3 large eggs
1 cup dark corn syrup
2/3 cup sugar

Preheat the oven to 375 degrees. Prepare the pie crust and set aside.
In a medium-size bowl, using an electric mixer, beat together the peanut butter, vanilla, salt, and melted butter until well blended.
In a large bowl, beat the eggs, corn syrup, and sugar together with the mixer, then fold in the peanut butter mixture.  When thoroughly combined, pour the filling into the pie crust.
Place the pie in the oven and bake until the crust is golden brown, 40 to 50 minutes.  Let cool on wire rack.
Serve warm or chilled and garnish with whipped cream.

Makes one 9-inch pie

It smells heavenly in the house-like the best batch of peanut butter cookies ever-completely intoxicating.
The pie has a perfectly golden crust and dreamy rich brown filling-gorgeous! 
I'm hoping that it tastes as  good as it looks.  Unfortunately, I can't slice it yet, but I promise to update with the taste test later.......
