I love the endless possibilities of summer fruit pies. Periodically, I think about designing some sort of fruit flow chart, so I can map out the combinations that I have tried and have yet to try. Then I realize that I much prefer to leave it to chance and whim: what have I got on hand, what is on sale, or what looks particularly juicy today at the farm market.
Today's chance meeting: blackberry, mango and pear.
Mango is a great addition to any berry pie, but I wanted just a bit more heft and body for this pie. A few still crisp pears step up to the job beautifully.
Blackberry Mango Pear Pie
recipe by me
double 9" pie crust
3 firm bosc pears
2 mangoes
12 oz fresh blackberries
1 1/4 cup sugar
3 T flour
1 t lemon zest
2 T butter
-in large bowl, combine the cut fruit with blackberries
-add sugar and stir until coated
-spoon into prepared pie crust
-sprinkle flour and lemon zest on top
-dot with pieces of butter
-top with crust, crimp and vent
-bake at 350 degrees for
-cool on rack
