quick tip


If you just don't have the time or energy to preserve summer tomatoes by canning, here's a quick tip to save up some of that summer goodness for winter cooking.  Simply place fresh whole tomatoes on a cookie sheet or tray and freeze uncovered overnight.  Then pop those babies in a freezer bag or freezer safe container and stow them away in the freezer. 




When you want to pull them out to use them (easy to grab one or the whole bag!), simply run under tepid water and the skins will peel right off.   Unfortunately, you won't be able to slice them like a fresh tomato, but they are wonderful in stews and sauces, just like canned tomatoes.
