halloween burritos


I was making one of my favorite dinners last night, and realized that it would make a perfectly ghoulish Halloween dinner.  Sweet potatoes add a whole new dimension to black bean burritos, and make for a festive color combination.  Served up with green tomatillo "swamp sauce" dotted with black olive eyeballs, this dinner is just the thing for hungry trick or treaters.

Black Bean and Sweet Potato Burritos

2/3 cup onion, chopped
2 T cumin seed
1/8 teaspoon cayenne
1/2 teaspoon salt
1 can black beans, drained and rinsed
2 medium sweet potatoes, precooked, peeled and cubed (i just pop them into the microwave for 5-7 minutes until they are precooked a bit, but still firm)
1 c tomatillo sauce, canned or homemade
1/4 c grated cheese
tortillas



-heat 2 T olive oil in large skillet, then add cumin seed
-cook over medium heat until seeds start to crackle and pop
-add onion and saute for 5 minutes
-add black beans, cayenne, salt and sweet potatoes
-add 3/4 cup of tomatillo sauce and cook covered until potatoes are fork tender, but not mushy
-stir in grated cheese ( a sharp white cheddar is great!)
-wrap up in warm tortillas and serve with remaining sauce
