Ham and Corn Chowder

A good friend of mine had a baby recently (welcome Nora!), and I took a care package to the new parents.
Soup always seems like a good bet for a comforting and nourishing meal, and this chowder is the perfect combo of veggies, meat and creamy goodness.   Included in the care package were a big container of this soup and freshly baked corn muffins.  (Also, a pie that will be featured this Friday on Pie Day)  Cooked, crumbled bacon or cooked cubed chicken would be great substitutes for the ham.  If you're a veggie, you can just omit the ham for a simple and tasty potato corn chowder.

Ham and Corn Chowder

3 T olive oil
3 leeks, sliced
3 cups red potatoes, cubed
1 lb cooked ham, cubed
1 cup frozen corn (or fresh, of course, if you have it)
3 cups vegetable broth
1 cup milk
1/2 t ground sage
pepper to taste

-saute leeks in olive oil for 5 minutes
-add cubed potatoes and saute for another 5-7 minutes

already looks good enough to eat!

-add broth, sage and pepper (I didn't need to add salt because my ham was quite salty, but feel free to add a bit at this point if your ham is not very salty or if you're doing a veggie version)
-bring to boil, then reduce to a simmer
-simmer for 30 minutes
-add cubed ham and corn
-simmer, covered, for 1 1/2 to 2 hours
-add milk and simmer until heated through

  1. Christine is a great friend ~ she forgot to mention the two dozen cookies that came with the care package ~ truly a lifesaver! The chowder was fabulous and the pie was perfect (we enjoyed it for breakfast the next day it was so darn good)! Nora, Chris and I all THANK YOU!
