Oatmeal pie is an everyday pie. Like ticking fabric, it is unassuming, yet surprisingly lovely and elegant in its simplicity. Fancier versions with a longer ingredient list and extras like nuts are out there, but I wanted to try the simplest version that I could. Nothing fancy, with restraint in the number of ingredients, and the amounts.
Oatmeal Pie
2 eggs
2/3 c sugar
1/4 c butter, melted
1 t vanilla
2/3 c light corn syrup
2/3 c old fashioned oats
-prepare single pie crust
-preheat oven to 350
-in medium bowl, beat eggs and sugar
-add butter, vanilla and corn syrup and beat again
-stir in oats until all is well combined
-pour into prepared pie shell
-bake ast 350 for about 45 minutes, until filling is set and crust is browned
The oatmeal rises to the top and forms a crunchy crust on top of the filling, which is a little bit like custard and a little bit like pecan pie filling. Other basic pies like custard and chess are slightly more to my liking, but this pie is worth a try. It doesn't demand a lot, and is surprisingly satisfying.
